Abstract:

Proanthocyanidins,as naturally occurring polyphenolic compounds in plants, are widely found in plant-derived foods such as grape seeds, pine bark, and apples. They exhibit multiple bioactivities including antioxidant,anti-inflammatory,and antitumor effects, and are extensively applied in the fields of food, biomedicine, and cosmetics. However, due to the complexity of plant matrices and the existence of proanthocyanidin in various polymeric forms, traditional spectrophotometric methods cannot effectively differentiate components with different degrees of polymerization. In contrast, high performance liquid chromatography(HPLC),with its advantages of high resolution and efficient separation, has become an important technique for the separation and analysis of proanthocyanidin. To provide a more solid theoretical foundation and practical guidance for the application of proanthocyanidin in food, medicine, and other fields, this paper systematically reviews the latest research progress on the bioactivities and detection methods of proanthocyanidin, and discusses the potential challenges in future studies, aiming to offer a systematic theoretical basis and scientific support for the efficient development, precise application, and industrial promotion of natural polyphenolic active substances.
