Abstract:

To explore the differences in cherry tomato extracts obtained by different extraction methods, this study utilized headspace-gas chromatography-ion mobility spectrometry(HS-GC-IMS)technology combined with sensory evaluation to analyze the volatile components in cherry tomato extracts prepared by solvent reflux extraction,ultrasonic-assisted extraction, and supercritical extraction. The results showed that the sensory score of the extract obtained by solvent reflux extraction was the highest when added to cigarettes. A total of 39 volatile components were identified in cherry tomato extracts obtained by 3 extraction methods, mainly including acids, aldehydes, alcohols, ketones, and esters. The main volatile components in different cherry tomato extracts included salicylaldehyde, ethyl benzoate,2-methyldecanoic acid, methyl nonanoate,2-butanol,ethyl acetate,4-ketoisophoron M,and linalool oxide. In conclusion, the cherry tomato extracts obtained by different extraction methods are different.
