Comparison of quality characteristics of hawthorn leaves from different varieties at different stages

Abstract:

Hawthorn leaves are rich in nutrients,with a variety of health functions. In this paper,the water content,color variation,chlorophyll,vitamin C and total flavonoid content of hawthorn leaves in different varieties and different periods were compared, in order to analyze the quality characteristics of hawthorn leaves,which provided a theoretical basis for the processing and comprehensive utilization of hawthorn leaves. The results showed that during the growth period,the water content of hawthorn leaves across different varieties first increased and then stabilized,while chlorophyll content continued to rise. Vitamin C content initially increased before declining,and total flavonoid content peaked during the bud stage before decreasing. Total color differences among hawthorn leaf samples were significant (p<0.05) in the early stages but not significant in later phases. Among the test varieties,the leaves of Jinruyi during the bud stage exhibited high contents of chlorophyll,vitamin C,and total flavonoid,making it a particularly suitable variety for processing. Correlation analysis revealed that water content exhibited a highly significant(p<0.01)correlation with chlorophyll content,total flavonoid content,and color difference;chlorophyll content showed a highly significant negative correlation with total flavonoid content. These findings provided a theoretical basis for the processing and utilization of hawthorn leaves.
