摘要:

鲜食大豆因其丰富的营养和独特的口感逐渐成为热门消费产品,但其水分含量高、供应期短,在储藏和市场流通过程中极易出现褐变和腐烂,直接影响种植效益。解决鲜食大豆市场供应问题的主要方式是应用储藏保鲜技术延长其货架期和将其及时加工成产品以提高其利用率。本文对鲜食大豆在储藏保鲜、采后加工、增值利用等方面的研究现状进行了总结概括,并且对鲜食大豆产业发展前景进行展望,以期为浙江省鲜食大豆的加工与利用提供参考。

Abstract:

Vegetable soybeans have gradually become popular as consumer products due to their rich nutrition and unique taste. But they have high moisture content and a short supply period. Browning and decay are highly prone to occur during storage and market circulation, directly affecting the efficiency of cultivation. To solve the problem of supply and demand in the vegetable soybean market, it is mainly to apply the storage and preservation technology to extend the shelf life and process them into products in time to improve the utilization rate. This article summarized the research progress of vegetable soybeans in the storage, preservation, post-harvest processing, and value-added utilization. The development of the vegetable soybean industry is comprehensively prospected in Zhejiang Province of China in order to provide a reference for the processing and utilization of vegetable soybeans.
