Abstract:

To compare the differences in production performance and muscle nutritional quality between the introduced stock Taihu No.3 and the native stock of Macrobrachium nipponense under rice-prawn rotation system, and to screen for superior stock suitable for this model, this study took the introduced stock Taihu No.3 and the native stock as research subjects, and conducted a comparative experiment under uniform stocking density, feeding management, and environmental conditions to compare the differences in growth performance and muscle nutritional composition between the two stocks. Under identical cultivation and management practices, male Taihu No. 3 prawn exhibited superior growth performance relative to native female stock. The muscle of Taihu No. 3 contained significantly (p<0.05) higher levels of crude ash, lysine, isoleucine, saturated fatty acid (SFA), polyunsaturated fatty acid (PUFA), n-6 PUFA,and sodium than the native stock, whereas concentrations of methionine, cysteine,C20:5 n-3(EPA)+C22:6 n-3(DHA),monounsaturated fatty acid (MUFA), n-3 PUFA, K,P,Mg and Fe were significantly lower than those in the native stock. These findings indicate that Taihu No. 3 has advantages in growth performance, mineral deposition, and certain essential amino acid contents,as well as muscle flavor. In contrast, the native stock displayed superiority in nutritional value, umami intensity, and health benefits. Hybridization between Taihu No. 3 and the native stock could balance growth performance with nutritional quality, flavor, and functional value in M. nipponense.
