基于主成分分析的黄酒糟潜在饲用价值评价

摘要:

为探究不同品牌黄酒糟的营养成分差异,本研究选用了3种品牌(古越龙山、会稽山和女儿红)的黄酒糟,对其进行基础营养成分、脂肪酸和氨基酸含量分析,并对所有营养成分进行主成分分析。结果表明,古越龙山品牌黄酒糟中的灰分和粗纤维含量最高。会稽山品牌黄酒糟中的粗蛋白、粗脂肪、总酸、钙、棕榈酸、顺亚油酸、谷氨酸和亮氨酸的含量最高。主成分分析结果表明,所有营养物质可提取2个主成分,累计方差贡献率达100.00%。3个品牌的主成分综合得分从高到低依次为会稽山、古越龙山、女儿红。

Abstract:

This study aims to investigate the differences in nutritional components among various brands of Huangjiu lees. Three brands,Guyuelongshan,Kuaijishan,and Nü'erhong,were selected. The basic nutritional components,fatty acid,and amino acid contents of three brands were analyzed,and principal component analysis was conducted for all nutritional components. The results showed that Guyuelongshan lees had the highest ash and crude fiber content,whereas Kuaijishan lees had the highest levels of crude protein,crude fat,total acid,calcium,palmitic acid,linoleic acid,glutamic acid,and leucine. The results of principal component analysis indicated that two principal components were extracted from all nutritional components,with a cumulative variance contribution rate of 100.00%. The comprehensive scores of principal components of the three brands Huangjiu lees,from high to low,were Kuaijishan,Guyuelongshan,and Nü'erhong.
